SHANGRI-LA AT THE FORT, MANILA WELCOMES MINISTRY OF CRAB AS THE NEWEST FOOD DESTINATION IN THE PHILIPPINE CAPITAL

On January 16, 2019, Shangri-La at the Fort, Manila opened the award-winning Sri Lankan seafood dining concept Ministry of Crab, Manila in partnership with world-renowned chef Dharshan Munidasa. The restaurant stems from the first Ministry of Crab based in Colombo, Sri Lanka, which was ranked 25th on Asia’s 50 Best Restaurants 2018 sponsored by S. Pellegrino & Acqua Panna, continuing its presence on the acclaimed list since 2015.

At the new outpost in Manila, guests enjoy a casual dining experience set against a colonial architectural backdrop inspired by the Colombo flagship. The menu features Sri Lankan signatures and decadent seafood dishes with fresh ingredients sourced from the Luzon, Visayas and Mindanao, Philippines regions.

 

 

 

 

 

 

 

 

 

Guests can indulge in the flagship’s signature Pepper Crab and Chili Crab, as well as crab prepared Filipino-style like guinataan, which is made of coconut milk and chili, and pinakurat, a dish made with spiced coconut vinegar. Guests can end on a sweet note with a special dessert menu featuring Sri Lankan and Filipino flavors such as agar agar, kulfi, pistachio and the Philippine mango.

Guests can also imbibe on Sri Lankan-inspired cocktails from a specially-curated menu created by Shangri-La at the Fort, Manila’s Executive Mixologist Ulysse Jouanneaud. As far back as the fifth century, Sri Lanka served as an integral sea port for trade between Asia and the West, particularly for spices, leading the way to its nickname as Spice Island. Jouanneaud pays homage to the country’s spice roots by incorporating ingredients such as cinnamon and ginger into the cocktails. The restaurant will also offer homemade ginger beer, specially-distilled spirits and a diverse selection of tea, a nod to Sri Lanka, the world’s largest tea-producing nation and the home of Ceylon tea.

Ministry of Crab, Manila is Shangri-La Group’s third collaboration with Chef Munidasa, following the successes of a pop-up restaurant at Shangri-La Hotel, At The Shard, London and Kaema Sutra, a restaurant at Shangri-La Hotel, Colombo featuring Sri Lankan cuisine.
